Hi, this is Jules Fox with Healthy Cooking Made Easy. I turned into inside the mountains at a cabin with some buddies and shot this myself. These “pancakes” flavor scrumptious and are sugar-free, dairy-free, and wheat-unfastened. Here’s the recipe:
1½ cup leftover mashed potatoes
1 extremely over-ripe banana
Add the banana and the egg to the potatoes and mix until there are no lumps.
Melt a little butter in a skillet or flat pan over low heat.
Pour three or four small pancakes into the melted butter.
Turn them over when browned on the bottom and bubbles start coming through to the top.
Cook until browned on the second side.
Serve with syrup, or butter, or fruit; or for a savory option, with ketchup or hot sauce.
