Chicken and broccoli tagliatelle in a white wine, garlic and cream sauce.

Chicken and broccoli tagliatelle in a white wine, garlic and cream sauce.

Ingredients:

  1. 8-10 tagliatelle nests

  2. 3-4 diced chicken breasts

  3. 1 tablespoon of olive oil

  4. 1 onion, finely chopped

  5. 5-6 broccoli florets, halved

  6. 3-4 garlic cloves, minced

  7. 300ml double cream

  8. 150ml white wine

  9. 100ml chicken stock

  10. Salt and pepper to taste

  11. Parmesan cheese to finish

Instructions:

Pasta:

  1. Cook tagliatelle in salted water until al-dente. Drain and cover with cold water to stop cooking. Set aside.

The rest of it:

  1. Heat olive oil in large frying pan

  2. Add diced onion and cook over medium-high heat until soft.

  3. Reduce heat to medium.

  4. Add chicken and cook until browned.

  5. Add white wine and garlic. Simmer for 5 minutes

  6. Add chicken stock and simmer for 5 minutes

  7. Add cream, broccoli, salt, and pepper.

  8. Simmer until sauce reduced slightly and thickened (about 10 minutes).

  9. Drain pasta from cold water and add into the pan with the rest of it, making sure pasta is evenly coated.

  10. Plate up and sprinkle Parmesan over. Add a touch more salt if needed.

Notes: A recipe I started cooking over the past year or so. Happy for any ingredient suggestions I can tinker with in the future 🙂
