 IngrédientsFor the chermoula:

– 1/2 bunch fresh parsley
– 2 tbsp. extra virgin olive oil
– 1 C. honey
– the juice of half a lemon
– 3/4 tsp. salt
– 1/4 tsp. paprika
– 1/4 tsp. coffee turmeric
– 1/4 tsp. cinnamon
– 1 clove of garlic
if you are left with this chermoula, you can keep it cool in a small, tightly closed jar.

*** For the tagine quince:

– 2 quinces
– 2 to 3 tangerines
– 1 nice handful of grapes
– 1 glass of demerara sugar, or white sugar
– 2 glasses of water
– 1 cinnamon stick
– 2 linen anise
– the juice of half a lemon
– candied cherries for decoration
– sesame seeds, toasted almonds or pistachios for decoration
