Sheet Pan Lemon Chicken with Broccoli is the correct meal to deliver you lower back to fundamentals. There’s not anything higher than a simple sheet pan hen dinner, and this Lemon and Broccoli Chicken Recipe is the final weeknight meal!
- 4 chicken breasts 6oz each
- kosher salt
- 3 stems rosemary
- 2 heads broccoli cut into florets of equal size
- 1 lemon quartered, visible seeds removed
- 2 tablespoons olive oil
Place a sheet pan into the oven and preheat to 400 degrees.
Pat chicken dry with paper towels and coat both sides with kosher salt and pepper.
Pull the hot pan out of the oven and spread 1 tablespoon olive oil on top. Place chicken, broccoli, rosemary, and lemon quarters on the hot pan and top with remaining 1 tablespoon olive oil. Toss gently to coat.
Bake for 25-30 minutes until the chicken reaches 160 degrees. Remove from oven and discard the rosemary stems. Once cool enough to touch, squeeze the roasted lemon quarters over chicken and broccoli. Sprinkle broccoli with a pinch of kosher salt.
Serve warm with your favorite grain or side dish.
