Homemade Baked Tandoori Chicken

Juicy and flavourful baked tandoori chicken with charred bits! Made with fantastic easy self-made tandoori marinade sauce and mint yogurt sauce to go together with it. Don’t overlook some spoonfuls of mango chutney also. The mixture is just superb!

Homemade Baked Tandoori Chicken

Ingredients

  • 3.5 lb free-range whole chicken (1.6 kg)

The marinade sauce

  • 2 cups plain unsweetened yogurt (500 gr)
  • 3 tbsp tandoori spice mix
  • 2 tsp chili powder
  • 1 tbsp smoked paprika
  • 2 tsp salt
  • 2 tsp grated ginger
  • 5 garlic cloves, grated
  • 1 lemon, the juice

The mint yogurt sauce

  • 1/2 cup plain unsweetened yogurt (125 gr)
  • 1 tbsp mint leaves, chopped
  • salt to taste
  • a squeeze of lemon juice

Instructions

Preparing the chicken

  • Place the whole chicken on a cutting board, breast side down. Using a sharp kitchen shear, cut alongside the backbone starting from the bottom all the way to the neck. Flip the chicken breast side up. Using the heel of your hand, carefully press the chicken breast to flatten it.
  • Remove the skin. Use a kitchen paper to pull the skin out from the chicken legs. You can see the method in the video above.
  • Make random slashes on the chicken and set aside. This helps the flavors to get through and increase the surface of the crunchy bit while baking.

The marinade sauce

  • In a bowl, add all of the marinade sauce ingredients. Stir everything to combine.
  • Pour the marinade sauce on previously prepared chicken. Rub the sauce on both sides of the chicken. Get in the slashes that we have made earlier also.
  • Cover with cling film and chill in the fridge overnight.

Baking

  • Place the marinated chicken on a baking tray with a rack. Bake in a preheated oven at 400ºF (200ºC) for 50 minutes or until the chicken is fully cooked. Spray the chicken with some oil, now and then, during the cooking time to get that beautiful charred effect.

The mint yogurt sauce

  • In a bowl, add all the mint yogurt sauce ingredients and stir. Adjust salt and lemon juice to your taste.
