GARLIC BUTTER ROASTED CARROTS

INGREDIENTS

  • 1 lb carrots, washed and cut diagonally into 1-2″ pieces
  • 8 cloves of garlic, minced
  • 4 tablespoons butter (or vegan butter)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • fresh chopped parsley, for garnishing

INSTRUCTIONS

  1. Cut carrots and place in a small baking dish
  2. In a small bowl, add butter and minced garlic
  3. Microwave butter/garlic for 30-45 seconds, or until butter is melted
  4. Add salt and pepper to the butter mixture and stir to combine
  5. Pour butter over carrots and toss to coat evenly
  6. Roast at 425 for 15 minutes and stir
  7. Roast an additional 15 minutes, or until tender
  8. Garnish with fresh parsley
