INGREDIENTS :

Cooking spray

1 tbsp. extra-virgin olive oil
medium onion, chopped
stalk celery, chopped
cloves garlic, minced
1 tsp. dried oregano
1 tsp. chili powder
2 lb. ground beef
1 c. shredded cheddar
1/2 c. almond flour
1/4 c. grated Parmesan
eggs
1 tbsp. low-sodium soy sauce

Kosher salt

Freshly ground black pepper

DIRECTIONS :

  1. Preheat oven to 400°. Grease a medium baking dish with cooking spray. In a medium skillet over medium heat, heat oil. Add onion and celery and cook until soft, 5 minutes. Stir in garlic, oregano, and chili powder and cook until fragrant, 1 minute. Let the mixture cool slightly.
  2. In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper. Shape into a large loaf in baking dish, then lay bacon slices on top.
  3. Cook until bacon is crispy and beef is cooked through about 1 hour. If bacon is cooking too quickly, cover dish with foil.
