Flavorful romesco sauce is ideal for dipping grilled chicken.
- Brush chicken breasts with 1 tablespoon olive oil; season with 1/4 teaspoon each salt and pepper. Grill, covered, 20 minutes on medium or until just cooked (160 degrees F), turning over once.
- In food processor, pulse roasted red peppers, almonds, garlic, sherry vinegar, and 1/8 teaspoon salt until finely chopped. With machine running, drizzle in 2 tablespoons olive oil. Serve chicken with green beans, wild rice pilaf and sauce. Garnish with parsley.
