small skinless, boneless chicken breast halves
extra-virgin olive oil
Kosher salt
1/4 tsp. Freshly ground black pepper
1/2 c. roasted red peppers
1/3 c. blanched slivered almonds
small cloves garlic
2 tsp. sherry vinegar
Cooked green beans
Wild Rice Pilaf
Chopped parsley, for garnish


  1. Brush chicken breasts with 1 tablespoon olive oil; season with 1/4 teaspoon each salt and pepper. Grill, covered, 20 minutes on medium or until just cooked (160 degrees F), turning over once.
  2. In food processor, pulse roasted red peppers, almonds, garlic, sherry vinegar, and 1/8 teaspoon salt until finely chopped. With machine running, drizzle in 2 tablespoons olive oil. Serve chicken with green beans, wild rice pilaf and sauce. Garnish with parsley.
